What can be made from strawberry physalis?

The fruits of raisin physalis have a pleasant sweet and sour taste and a characteristic smell reminiscent of the smell of strawberries, for which this species received its second name - strawberry. Thanks to their clearly perceptible strawberry flavor, they make an unusual and very tasty raisin. The technology for preparing physalis raisins is very simple. The collected berries are sorted by size, washed, laid out on baking sheets and dried in the oven for 30-40 minutes or kept in the sun for 1-2 hours. Dried physalis is poured into bags and stored in a dry place.

You can make many other sweet delicacies from strawberry physalis, for example, candied fruits, compote, marshmallow or jam.

The pleasant aroma of strawberries is also preserved in the jam, which will not only decorate any table, but also add piquancy to it. To make the jam, ripe physalis fruits are dipped in boiling water for 2-3 minutes, and then put in sugar syrup for 2-3 hours. A syrup for 1 kg of fruits is prepared at the rate of 0.5 kg of sugar per 0.5 liters of water. Then add another 0.5 kg of sugar to it, put the pan on the fire and cook for 15-20 minutes. The finished jam is poured into sterilized jars and tightly closed with sealed lids.

It is necessary to collect physalis fruits only in dry weather and immediately separate the fruits from the cups so that the jam or candy does not have a bitter taste. The fruits must be thoroughly washed, sorted by size. You can prick each fruit in several places with a thin fork.

Physalis pastila is a wonderful and rare delicacy. To prepare such a marshmallow for 1 kg of fruit, 0.5 kg of sugar and 0.2 kg of any nuts are required.

Pour boiling water over Physalis and then pat dry with a paper towel. Cut into small pieces, sprinkle with sugar and leave for 2 hours to extract juice.

Put on fire, bring to a boil and cook for 10 minutes. Rub the resulting mass through a sieve, put on a baking sheet and put in an oven preheated to 120 degrees for 20 minutes. When the mass stops sticking to the spoon, pour it onto foil and dry it, then sprinkle with chopped nuts, roll up, cut into equal pieces and transfer to a cardboard box.
