For 1 kg of pork loin:
cheese - 100 g
fresh spinach - 50 g,
pistachios - 250 g
garlic - 2 cloves,
olive oil - 50 ml.
Cooking methodIn a blender, grind pistachios, spinach, cheese and garlic until a paste, then add olive oil.
Cut a piece of pork loin lengthwise, without cutting to the end about 1 cm. Expand the piece and cut it from the inside from the center, also without cutting it to the end. Beat the resulting large flat piece of meat a little to make it smoother.
Put the prepared filling on the meat, smooth it over the entire area of the piece of meat. Fold the loin into a roll. Place in a suitable baking dish, cover with foil and place in an oven preheated to 190 degrees.
Bake for 40-45 minutes, then remove the foil and brown the meat for another 5-10 minutes.
When serving, cut the loin into pieces 1.5-2 cm thick.
