In addition to them, there are also sugar varieties, in which not only seeds, but also the shells of beans are eaten. They are eaten fresh or canned. The same green peas that you can buy in almost every store are nothing more than unripe sugar pea seeds. For a long time, they were just a delicacy for children. Only in the 30s of the 18th century, dishes from green peas began to be served at court dinners. He came to the taste of the St. Petersburg nobility, and soon, by the highest command in one of the palace villages, they began to grow sugar varieties of peas. A little later, Yaroslavl gardeners introduced dried sugar peas into use. It was harvested still unripe and dried in a special way, which was kept secret. Sugar peas were a profitable item of Russian exports until they were replaced by canned peas.
