Can green potatoes be eaten?

The poisonous substance found in the fruits and leaves of potatoes is called solanine. In small quantities that are harmless to the body, it can also be found in potato tubers. During germination of a tuber, if it is kept in the light for some time, the amount of solanine in it increases. That is why you should not eat very green potatoes, while sprouted tubers need more careful processing. To be on the safe side, it is enough to cut off the thicker than usual layer of potato skins and cut out all the hatched eyes.
